📌Step 1: Gather ingredients: Chinese cabbage, 1 carrot, 1 onion, green onions, chives, and a complete kimchi salt seasoning package.
📌Step 2: Prep ingredients: Wash, peel, and slice carrots, onions, green onions, and chives. Clean cabbage, remove wilted leaves, and slice. Drain all ingredients.
📌Step 3: Salt cabbage: Quarter cabbage, rub salt into leaves, soak in water for 2-4 hours, then rinse to remove saltiness.
📌Step 4: Season: Combine cabbage and prepared veggies in a bowl. Add kimchi salt seasoning, mix thoroughly with gloves.
📌Step 5: Ferment and store: Transfer mixture to a sealed jar, ferment at room temp for 3-4 hours. Refrigerate for up to 1 month. Enjoy bite-sized portions as needed.
